LA SIDRA.- As announced after the completion of the basic cider sommelier course, the Cider Sommelier School is organizing the first specialization workshop in cider sommelier training, to be held on Wednesday, June 25th, from 6:00 PM to 9:00 PM at the facilities of Restaurante El Duque, with the following schedule:
6:00 – 6:20 PM
Dr. Marcos Abel Fernández: “Cider as Food”
6:20 – 8:20 PM
Juan Luis García, with the following objectives:

Develop the ability to distinguish the four basic tastes (sweet, bitter, sour, and salty) in water-based solutions.

Develop the ability to distinguish sweet, sour, and bitter flavors in natural cider.

Develop the ability to identify astringency and acetic sensations during tasting.

Identify faults in natural cider.

Complete and quantify tasting sheets based on perceived stimuli, using the established scoring system.
8:30 – 9:00 PM
Faustino Vázquez, from Llagar Panizales, will lead a guided tasting of his cider “Olivia”.
Cider of Ice and Fire
Only 10 spots are available for this workshop. Registration opens on June 1st for certified cider sommeliers, and on June 5th for all other interested participants.
The fee is €30 as a donation, and payment must be made after your registration has been confirmed. The amount should be transferred to the Fundación Asturies XXI account:
