LA SIDRA.- Over the centuries, the word “wassail” has meant many things: a salutation (good health), a noun (the drink) and a verb (to sing).
For cider lovers and apple growers, especially in the West Country of England, it means a ritual blessing for apple trees.
Villagers carrying torches gather in the orchad on the twelfth night and circle the largest tree. They pour cider on the roots, hang toast on the branches as offerings, fire guns and make loud noises to frighten away the evil spirits. Everyone sings songs to the trees to ensure a good harvest in the fall.
Wassail Cider Bar offers a menu inspired by cuisines of cidermaking regions, exploring the excepcional pairing qualities of cider to create original and satisfying dishes with multiple flavours and textures.
Wassail- the word, the ritual and the place- is about conviviality, sharing food and drink and, in this particular spot, paying homage to the orchads that once grew here.
